When Alice Waters was a little girl, her mother dressed her up as a salad for a school play. This episode affected her more deeply than anyone might have imagined. Alice, so early exposed to the intimate notion of actually being a vegetable, came to feel for them more tenderly than almost anyone else in the world. Perfect, tasty, fresh, there's nothing quite like a vegetable served at the peak of the season. As the twig is bent, so grows the tree.
